Wild ramps are in the allium family and are often referred to as wild leeks. Wild and perennial vegetables are key to diversifying vegetable consumption (and to ensuring optimal health) because of their extra-rich nutrient content. Due to their time spent mining the humus on cool forest floors, wild ramps are a rich source of such valuable minerals as selenium (which supports immune function), chromium (needed for blood-sugar regulation), and iron (essential for production of healthy red blood cells). They're also a good source of choline, which is needed for brain development, and the sulfur-containing compound kaempferol, which protects the lining of the blood vessels in our bodies.
And then there's the delicious, uniquely flavorful onion-garlic taste, which is prized by the best chefs. There is typically a frenzy over wild ramps at farmer's markets when they come into season due to their taste as well as their rarity: their season is only a few weeks long, and they grow only on the forest floors of the eastern United States and Canada. On top of that, they grow slowly — requiring up to four years to flower and reproduce — so sustainable harvesting is a must.
The wild ramps in this powder were foraged in May from the Appalachian Mountains of West Virginia. Because the powder is stored in a Miron jar, this tender and flavorful plant is now available for year-round cooking as a delicious powder.
