Verbena is one of our favorite herbs to support the digestive system. It’s rich in calming polyphenolics, and it’s also used by herbalists for a variety of conditions, including joint pain, insomnia, and respiratory irritations. It has a wonderfully uplifting scent and a refreshingly lemony taste. It’s a total crowd-pleaser.

How to Use

Use 1 tsp per cup, dosage on taste. Simmer for 5 minutes at 203 degrees Fahrenheit (just before boiling), covered. Strain and serve warm or at room temperature. Alternatively — just as good! — bring water to a boil, then pour over leaves and steep, covered, for 5 minutes.

Note to avid cooks from the Daphnis and Chloe team: “Verbena is very well suited for experiments due to its combinable, lemony flavor. Powder the leaves and use in sponge cakes or homemade pasta. It makes a unique substitute for lemon or mint in poultry and stuffing recipes.”
